A recreation of Sooz and Kevin’s favorite dish from Noodles & Company.

penne pasta1 tbsp
olive oil8 oz
sliced mushrooms (optional)3 cloves
garlic, pressed1 ½ cups
marinara sauce½ - 1 tsp
crushed red pepper flakes3
roma tomatoes, diced3 cups
fresh spinach½ cup
heavy whipping cream½ tsp
salt¼ tsp
black pepper½ cup
shredded parmesan cheese
Ingredients

penne pasta
Cook penne pasta according to package directions.

sliced mushrooms (optional)
While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add the sliced mushrooms and cook for about

, until mushrooms are tender.

garlic, pressed
To the skillet, add the pressed garlic and cook for an additional minute.

Stir in cooked and drained penne pasta, marinara sauce, and crushed red pepper flakes.

fresh spinach
Add in fresh diced tomatoes and spinach. Stir to combine and cook until spinach is mostly wilted.

heavy whipping cream½ tsp
salt¼ tsp
black pepper
Stir in the heavy cream. Add salt and pepper. Heat just until warm.

shredded parmesan cheese
Serve hot with parmesan cheese.
